About the Product

In the late 17th century, the French East India Company established a presence at Pondicherry, in South India. French-influenced Vadouvan Curry is a sweeter, shallot-based version of Tamilian curries Parisian cafe-goers delight in curried chicken salad seasoned with this blend. It has a rich savoury flavour that is more familiar to Western palates than many Indian spice mixtures. In Tamil cuisine, Vadouvan is used for tempering dishes like brinjal and avarakai poriyal and all sorts of kuzhambus. It gives these dishes a special flavour.

Ingredients

Fenugreek, Cloves, Yellow Mustard, Cardamom, Nutmeg.

How to Use

Red Lentil Soup: Heat oil, add the cumin and mustard seed, cook, add the shallots, add the lentils, water, vadouvan blend, garlic, and coriander. Bring to a boil, reduce heat, and cook. Add the tomatoes and salt to taste. Simmer stir in the baby spinach and cook just until wilted but still bright green serve.

Vadouvan chicken/lamb/okra/eggplant curry: Heat coconut oil, add onion, garlic and sautée, add vaduovan spice blend and salt, add tomato and meats or vegetables or a combination, cook. When almost done add coconut milk and simmer. Garnish with fresh cilantro and serve.
