Ingredients

Whole Masala: Bay Leaf, Cloves, Cinnamon, Cardamom, Star Anise, Black Stone Flower, Black Cumin Seeds.

Processed Masala: Red Chillies, Black Pepper, Cumin, Coriander, Fennel Seeds, Bay Leaf, Green Cardamom, Cinnamon, Star Anise, Nutmeg, Black Cardamom, Cloves, Mace.

How to Use

For Vegetable Curry:

  • Cauliflower: 8 florets
  • Potato: 1 large
  • Carrot: 1
  • Green Peas: Handful
  • Beans: 4-5
  • Green Chillies: 3
  • Paneer: 200 grams
  • Take a vessel and add 2 tablespoons of oil.
  • Heat the oil, then add 1 tablespoon of ginger-garlic paste and all the cut vegetables to the pan.
  • Cook until the raw smell disappears.
  • Add salt (as per taste), 1 tablespoon of red chilli powder, ½ teaspoon of turmeric, and 2 tablespoons of Matrika Veg Dum Biryani Masala. Fry until the masala mixes well.
  • Add 1 cup of curd/yogurt, mix well, and cook for a few minutes. Do not overcook the vegetables.

For Rice:

  • Take a bowl and add 750 grams or 1 kg of basmati rice. Wash thoroughly.
  • Add water and keep aside for at least 30 minutes.
  • After 30 minutes, take a cooking vessel and add 3 cups of water, 2 tablespoons of oil, and salt (as per taste).
  • Add 1 pack of whole spices provided in the Matrika Veg Dum Biryani Masala pack.
  • Bring the water to a boil, then add rice and cook until the rice is 80% cooked.

For Preparation:

  • Take a heavy-bottomed vessel.
  • Add the prepared vegetables and the 80% cooked rice.
  • Layer rice and add ½ bunch finely chopped coriander and mint leaves evenly.
  • Add 1 tablespoon of ghee and saffron water.
  • Close it with a lid and place a weight over the lid.
  • Place a tawa on the flame and move the biryani vessel over the tawa.
  • Cook for 10 minutes, then turn off the heat and serve.
