QUICK METHOD: (3 to 4 servings): Step 1: Put 1/4 litre of water in a large saucepan,, 1 tablespoon of oil, 1 teaspoon of salt and bring to boil. Step 2: Remove the saucepan from the heat. Stir and pour in 250g (8 oz.) of cous cous. Step 3: Allow steeping for 2 minutes. Step 4: Add 2 or 3 teaspoons of butter and cook over on very low heat for 3 min while stirring with a fork to separate the grains.

CLASSIC METHOD: For 3-4 persons: Step 1: In a large saucepan make roast the 2 glasses of cous cous in 2 tbsp. of oil. Step 2: Remove the cous cous from heat and pour the same volume of boiling water stirring the product to separate the grains. Step 3: Cover and allow to swell for a few minutes. Now the cous cous is ready. Add flavour at your choice.
