It was in the kitchens of the erstwhile Nizams of Hyderabad where cultures truly blended together by taking the best of each other â€“ be it Arabic, Mughal, Turkish or South Indian. Like most of Indiaâ€™s cities, Hyderabad is a blend of fairy-tale and reality, a motley mix of the old and the new, forming an exotic background for itâ€™s much sought after and mouth-watering cuisine. Since this spice blend was meant for the palate of the Royals, the recipe and ingredients were under guard and preparation techniques confined to the secrecy of the Palace Kitchens. Through Afifa Begum, we at Junyali are proud to be able to present to you the Nizami Spice Blend directly from the Royal household. It has been refined so that it can be used for all Nizami cuisine! Ghee and slow cooking is always recommended.

Mace, Cardamom, Nutmeg, Star Anise, Rose Petals.

How to Use

Kachche Gosht Ki Biriyani (Can Make with Vegetables): Heat oil in a pan, fry onions till golden brown. Marinate the meat in ginger and garlic paste. Add yoghurt, salt, red chilli powder, coriander, mint, green chillies, Nizami Hyderabadi spice blend, lemon juice, crushed onions and the oil in which the onions were fried. Mix well and marinate for about four hours. Wash the rice and mix with a cup of well-beaten yoghurt. Soak saffron in 3 tbs milk. Take a heavy bottom pan with a tight lid. Transfer the marinated meat with the marinade to the pan. Spread the rice over the meat. Sprinkle the saffron milk over the rice. Put dots of ghee. Cover and cook, first over a high flame, then over medium-low heat till the meat - vegetables are cooked.
