Badia Vinagres use The Schzenbach traditional acetification method, which allows aromas and flavours of a high subtlety. At the same time, the bottling system is modern and the tangential filtration system is used to clarify vinegars. The conjunction of tradition and innovation allows Badia Vinagres to go ahead in obtaining vinegars with a distinctive character. A bittersweet vinegar produced from intensely aromatic Merlot wine, with hints of vanilla and liquorice. Very sweet, elegant palate, enriched with toast notes acquired during the six months of aging in French oak casks that recall blackberries, raspberries and violets.
